Fresh Summer Cucumber Salsa

Another refreshing and super easy-to-make recipe coming your way! Today I’m sharing my Fresh Summer Cucumber Salsa. It’s one of my absolute favorite healthy summertime snacks and I can’t wait for you to try it!

This Fresh Summer Cucumber Salsa is inspired by a recipe one of my high school best friend’s mom would make for us. I vividly remember sitting out by the pool with friends on a hot Summer day and a bowl of this stuff being passed around along with a bag of Tostidos tortilla chips, everyone indulging.

The first time I tasted it, I was hooked! It’s so stinking good, it is hard to stop eating once you start. But, because it is made with wholesome ingredients, it’s a great guilt-free snack you can feel good about munchin’ on all Summer long.

For the “dressing” part of this recipe, I’ve swapped out the bottled fat-free Italian dressing that my friend’s mom would use for a homemade version using Whole30 compliant ingredients. Feel free to use bottled Italian dressing if you have it handy.

To get the cucumbers sliced up super thin, I used my Oxo grate + slice set. This has become one of my favorite kitchen gadgets! Snag one for yourself here:

Serve it up with your favorite tortilla chips or top a bed of lettuce with a bunch for an easy and refreshing summertime salad. Today, I served mine with Siete’s dip chips.

This salsa will last about 3-5 days in the refrigerator, if you can keep it around for that long 😉

Fresh Summer Cucumber Salsa

  • 6 mini cucumbers, (thinly sliced)
  • 1 red bell pepper, (finely diced)
  • 1 yellow bell pepper, (finely diced)
  • 1/2 medium red onion, (finely diced)
  • 1/4 cup fresh cilantro, (chopped)
  • 1/4 cup Italian dressing
  1. Thinly slice cucumbers, dice red + yellow bell peppers, dice red onion, chop cilantro.

  2. Combine all ingredients in large bowl and stir to combine. It's really that easy!
