One-Skillet Salmon all’Arrabbiata

This one is a banger, y’all. The simplicity of this recipe makes it a great option for a weeknight dinner and the richness of the salmon combined with the bold flavors of the arrabbiata sauce make this dish impressive enough to serve when hosting family or friends for dinner.

Now, I know what you’re thinking….. Salmon served with a tomato-based sauce?! Not a combo that comes to mind right away, right? Well, this One-Skillet Salmon all’Arrabbiata has definitely changed my mind!

I typically like to serve this one with orzo or couscous and a Caesar salad. There is a sneaky amount of greens packed into the sauce of this One-Skillet Salmon all’Arrabbiata, so I don’t always serve this one with a veggie on the side. When I do, I tend to go with roasted broccolini.

There you have it – this one comes together in no time!

One Skillet Salmon all’Arrabbiata

Ingredients

  • 2 Tbsp avocado or olive oil
  • 4 salmon fillets/portions, skin removed
  • salt + pepper
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 cups Rao's Arrabbiata sauce
  • 1 tsp Red Boat fish sauce
  • 1 tsp Penzey's Pizza seasoning or sub for your favorite Italian seasoning
  • 1 cup fresh spinach or baby spinach, roughly chopped
  • 1/4 cup parmesan, grated
  • 2 Tbsp fresh basil, chopped
  • 1/2 tsp crushed rep pepper flakes, for serving

Instructions

  •  Heat a large, non-stick skillet over medium heat.
  • Meanwhile, pat your salmon fillets with a paper towel to dry and season each side with salt and pepper.
  • Add avocado/olive oil to hot pan. Once your oil is hot, add the salmon portions and sear for ~3-4 minutes per side. Remove the salmon from the skillet and set aside.
  • In the same pan, add the diced onion and garlic and sauté until tender, ~2 minutes.
  • Pour in the Rao’s Arrabbiata sauce, fish sauce, Penzey’s Pizza seasoning (or your favorite Italian seasoning), and chopped spinach. Stir to combine and reduce heat to low. Let simmer until ingredients fully incorporated, ~2 minutes.
  • Stir in the grated parmesan and nestle the salmon portions back into the sauce mixture. Cook until the salmon is cooked through, ~2-3 minutes.
  • Top with crushed red pepper flakes, freshly ground black pepper, and chopped basil and you’re ready to dish up. Enjoy!
